  • 1 1/2 c. cornmeal
  • 1/2 c. flour
  • 3 tsp. baking powder
  • 3 Tbsp. sugar
  • 3/4 tsp. salt
  • 2 eggs, beaten
  • 1 c. grated Cheddar cheese
  • 1 (8 1/2 oz.) can creamed corn
  • 1 to 2 Tbsp. grated jalapeno peppers
  • 1/3 c. oil
  • 1/2 c. grated onion
  • 1/4 c. milk

Directions

    Mix dry ingredients together. Blend in remaining ingredients, adding more milk if mixture is too thick. Sprinkle additional cornmeal on bottom of hot greased iron skillet. Bake in preheated 450° oven 20 minutes or until brown.
