  • 2 c. self-rising cornbread
  • 1 heaping Tbsp. flour
  • 1 c. buttermilk
  • 1/2 c. oil
  • 1 small can corn (cream-style)
  • 1 jalapeno pepper, chopped
  • 1/2 green sweet pepper, chopped
  • 1/2 c. grated Cheddar cheese
  • 1 large onion, chopped fine
  • 2 eggs

Directions

    Mix meal and flour; add buttermilk, oil, eggs and corn.

    Stir in pepper, onion and cheese.

    Grease an oblong baking pan.

    Bake at 375° for 35 minutes until done.
