  • 2 1/2 c. cornmeal
  • 1 c. flour
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 4 tsp. baking powder (if using plain cornmeal)
  • 3 eggs
  • 1 1/2 c. milk
  • 1 (16 oz.) cream-style corn
  • 6 to 8 hot peppers (including the seed)
  • 2 c. grated mild Cheddar cheese
  • 2 c. grated onions

Directions

    In a bowl, stir together cornmeal, flour, sugar, salt and baking powder. Mix all ingredients well. In a separate bowl, beat eggs and stir in milk. Add liquid mixture to cornmeal mixture and stir in remaining ingredients. Pour batter into 2 well-greased and preheated baking pans and bake at 425° for 30 minutes or until done.
