  • 2 c. self-rising cornmeal mix
  • 3 large eggs, lightly beaten
  • 1 medium onion, chopped
  • 4 oz. can chopped jalapenos
  • 2 c. (8 oz.) shredded sharp Cheddar cheese
  • 16 oz. sour cream
  • 1/3 c. vegetable oil
  • 8 1/2 oz. can cream-style corn

    Stir all ingredients together in a large bowl. Pour batter into a lightly greased 13 x 9-inch pan. Bake at 350° for 1 hour or until top is golden brown. Makes 12 to 15 servings.
