- 1 1/2 c. cornmeal
- 3 tsp. baking powder
- 1/2 tsp. salt
- 3 eggs
- 1 c. sour cream
- 1 c. grated Cheddar cheese
- 1 can cream-style corn
- chopped jalapeno peppers
- 1/2 c. shortening
Directions

1Sift dry ingredients; add shortening.

2Blend until mixture is coarse and mealy.

3Add remaining ingredients, except peppers.

4Mix well.

5Fill greased muffin tin with mixture.

6Place peppers on top. Bake for 20 to 25 minutes at 450°.
