  • 2 c. yellow self-rising cornbread
  • 1/2 c. vegetable oil
  • 1 c. sour cream
  • 3 eggs
  • 1 can creamed corn
  • 1 medium onion, chopped
  • 6 to 10 jalapenos, chopped
  • cooked hamburger, sausage, bacon or ham, diced
  • 1 block grated cheese (save 1/2 to be on top)

Directions

    Grease 13 x 9-inch pan with vegetable oil.

    Mix all the ingredients together.

    Bake at 350° for 1 hour.

    Sprinkle grated cheese on top of hot cornbread to make a melted cheese topping. Serve with pinto beans.
