- 1 1/2 c. cornmeal
- 1 c. flour
- 2 Tbsp. sugar
- 1 Tbsp. salt
- 4 tsp. baking powder
- 3 eggs
- 1 1/2 c. milk
- 1/2 c. cooking oil
- 1 can Mexican corn, mashed with fork
- 6 to 10 jalapeno peppers (including seeds)
- 2 c. chopped onions
- 2 c. grated sharp cheese
Directions

1In mixing bowl mix together cornmeal, flour, sugar, salt and baking powder.

2In separate bowl beat eggs lightly and stir in milk and cooking oil.

3Add liquid to cornmeal mixture and stir in Mexican corn, jalapeno peppers, chopped onion and cheese.

4Pour batter into well greased baking pan.

5Bake at 450° for 30 to 40 minutes.
