- 1 3/4 cups all-purpose flour (sifted once)
- 3 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 tablespoons sugar (fine granulated)
- 6 tablespoons butter (or margarine)
- 1 egg (well beaten)
- 1/3 cup milk (approximately)
- 1/4 teaspoon cinnamon (ground)
- 4 tablespoons raspberry jam
Directions

1Preheat oven to 425F.

2Grease a cookie sheet.

3Mix and sift once, then sift into a bowl: Flour, Baking powder, Salt, 2 Tbsp Sugar.

4Cut in the butter (margarine) finely.

5Combine well beaten egg with milk.

6Make a well in the flour mixture: Add liquids, mix lightly with a fork to make a soft dough. Add a little more milk, if necessary, to make a soft dough.

7Knead for 10 seconds on a lightly floured board.

8Roll out to 1/2 inch (about 1 cm) thickness.

9Cut out with floured 2 1/2 inch (about 5 cm) cookie cutter.

10Arrange (well apart) on a greased cookie sheet.

11Make a deep impression in the centre of each round of dough.

12Brush dough with a little milk.

13Sprinkle with 1 Tbsp sugar and cinnamon.

14Drop a small amount of jam into each impression.

15Bake in preheated oven about 12 minutes.

16Serve immediately with butter (margarine).
