Ingredients
- 4 ounces sifted plain flour
- 1/4 teaspoon baking powder
- 2 ounces butter (lard use to be the thing to use back in the outback instead of butter)
- Glaze
- 2 ounces butter
- 4 ounces sugar
- 4 fluid ounces water
Directions

1Preheat your oven to 450 degrees F In a medium sized bowl, combine the sifted plain flour, baking powder and butter into a dough.

2Work into a dough with spatular.

3Knead into a dough.

4Turn onto a floured board.

5Roll out into a rectangle and spread jam (jelly) of your choice.

6Spread almost to the edge of the pastry.

7Roll up starting from the short edge of the rectangle and place into a greased baking dish.

8Then into a saucepan combine the butter, sugar and water.

9Stir over a medium heat on the stove until the mixture has melted.

10Pour mixture over the top of the Roly Poly place in an oven at 450 degrees for 10 mins then 350 degrees for 20 minutes.

11Watch the Roly Poly to make sure it does not burn.

12It will carmelise.

13Service with either, ice cream, custard or cream.
