- 1 1/2 lb. raw cleaned shrimp
- 1 c. diced ham
- 1 c. diced smoked sausage
- 1 c. diced hot links
- 2 Tbsp. butter
- 1/2 c. chopped onions
- 1/4 c. green pepper
- 2 cloves garlic, minced
- salt and cayenne pepper
- 1/4 c. celery
- 2 c. canned tomatoes, chopped and drained (save liquid)
- 3 c. rice
- 3 bay leaves
- 1 c. water plus tomato liquid
Directions

1Saute onions, green pepper, celery and garlic in butter.

2Add shrimp and meats, about 5 minutes.

3Stir in tomatoes and cook 10 minutes.

4Stir in rice and seasonings and liquids.

5Bring to a boil, cover and simmer until rice is done, about 20 to 30 minutes.
