  • 1 1/2 lb. raw cleaned shrimp
  • 1 c. diced ham
  • 1 c. diced smoked sausage
  • 1 c. diced hot links
  • 2 Tbsp. butter
  • 1/2 c. chopped onions
  • 1/4 c. green pepper
  • 2 cloves garlic, minced
  • salt and cayenne pepper
  • 1/4 c. celery
  • 2 c. canned tomatoes, chopped and drained (save liquid)
  • 3 c. rice
  • 3 bay leaves
  • 1 c. water plus tomato liquid

Directions

    Saute onions, green pepper, celery and garlic in butter.

    Add shrimp and meats, about 5 minutes.

    Stir in tomatoes and cook 10 minutes.

    Stir in rice and seasonings and liquids.

    Bring to a boil, cover and simmer until rice is done, about 20 to 30 minutes.
