  • 1/2 c. parsley, chopped
  • 1 medium onion, chopped
  • 1/2 c. green onion, chopped
  • 3/4 c. bell pepper, chopped
  • 1 tsp. minced garlic
  • 1 Tbsp. olive oil
  • 1 lb. smoked sausage
  • hot sauce or cayenne pepper
  • salt
  • 1 c. rice, uncooked
  • 1/2 c. dry white wine
  • 1 (8 oz.) can tomato sauce

Directions

    Over medium heat in a deep skillet or pot, saute the onions, bell pepper and parsley in olive oil until onions are clear.

    Add garlic, tomato sauce, wine and smoked sausage.

    Add rice and cover with enough water to cover by 1-inch.

    Salt to taste. Add cayenne or hot sauce to taste.

    Bring to a boil. Reduce heat to low, cover and let stand for 30 to 45 minutes.
