- 6 oz. hot smoked sausage, sliced
- 2 (14 1/2 oz.) cans Cajun style stewed tomatoes
- 8 oz. medium shrimp or 6 oz. diced ham
- 1 c. uncooked rice
- 1 large clove garlic, minced
- 1 bay leaf
- 1 Tbsp. chopped parsley
Directions

1Brown sausage (and ham if using) in 4-quart pan.

2Drain tomatoes, reserving liquid.

3Add water to liquid to make 1 1/2 cups.

4Add to sausage with tomatoes, shrimp and remaining ingredients.

5Bring to a boil.

6Stir.

7Reduce heat to low. Cover; simmer 30 to 35 minutes or until liquid is absorbed, stirring occasionally.

8Remove bay leaf.

9Yields 4 to 6 servings.
