- 2 Tbsp. salad oil
- 1 large onion, chopped
- 1 c. chopped green pepper
- 2 cloves garlic, chopped
- 1 c. cooked diced chicken
- 1 c. diced ham
- 1 c. sliced smoked sausage
- 2 1/2 c. peeled cubed tomatoes
- 2 1/2 c. chicken broth
- 1 c. uncooked rice
- 1 Tbsp. chopped parsley
- 1/2 tsp. thyme
- 1 1/2 tsp. salt
- 1/2 tsp. Tabasco
Directions

1Heat oil in large pan.

2Saute onion, green pepper and garlic until tender.

3Add chicken, ham and sausage.

4Cook 5 minutes.

5Add remaining ingredients.

6Mix well.

7Bring to boil.

8Cover and reduce heat.

9Cook approximately 20 minutes to 25 minutes or until rice is done and liquid is absorbed.

10Serves 8.
