Ingredients
- 1 c. graham cracker crumbs
- 1/4 c. sugar
- 1/4 c. butter, melted
- 3 (8 oz.) pkg. cream cheese, softened
- 1 c. sugar
- 3 eggs
- 1/2 tsp. grated lemon rind
- 1 Tbsp. lemon juice
Directions

1Combine first 3 ingredients in a bowl; blend well.

2Press into bottom of ungreased 9-inch spring-form pan.

3Set aside.

4Combine cream cheese and one cup of sugar; beat at medium speed until fluffy.

5Add eggs, one at a time, beating after each addition.

6Add lemon rind and lemon juice; mix well.

7Spoon cream cheese mixture over crust.

8Bake at 375° for 45 minutes or until cheesecake is set.

9Remove from oven, cool on wire rack; chill for 8 hours. Serves 8 to 10.
