Japan Vegetable Rice

- 3 Tbsp. cooking oil
- 2 leeks
- 1/2-inch root ginger
- 1 clove garlic
- 3/4 c. short grain rice
- 3 c. water
- pinch of salt
- 9 oz. green vegetables (try young spinach or frozen peas)
Directions

1Wash, trim and chop the leeks.

2Peel and finely chop the ginger.

3Peel and crush the garlic.

4Heat the oil in a wok or wide pan.

5Add the leeks, ginger and garlic.

6Fry gently for 5 minutes. Add the rice and stir for a few minutes.

7Add the water and the salt.

8Simmer for 10 minutes.

9Add the greens to the pan.
-
10Simmer for 10 minutes or until rice is tender.
