- 8 chicken drumsticks
- 1/2 cup light coconut milk
- 2 tablespoons ground coriander
- 1 tablespoon ground cumin
- 2 teaspoons ground turmeric
- 2 tablespoons tamarind paste
- 1/2 teaspoon galangal (optional)
- 2 garlic cloves, minced
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 2 tablespoons water
Directions

1Combine the spices, tamarind, salt and garlic cloves. Add enough water to make a moist paste.

2Add the chicken to the paste and massage into the chicken flesh. You make want to wear gloves as the tumeric can stain your skin.

3Marinade for a couple of hours in the fridge.

4Pour the coconut milk over chicken and place in a dish in a single layer.

5Place in a steamer and steam for 20 minutes.

6Remove and grill turning to brown evenly.
