- cooking spray
- 1 pound carrots, sliced
- 1/4 cup butter, melted
- 3 eggs, beaten
- 1/3 cup white sugar
- 1 teaspoon vanilla extract
- 1 pinch ground allspice, or to taste
- 1 pinch ground nutmeg, or to taste
- 1 pinch ground ginger, or to taste
- salt and ground black pepper to taste
Directions

1Preheat oven to 350 degrees F (175 degrees C).

2Coat a casserole dish with cooking spray.

3Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer.

4Bring water to a boil.

5Add carrots, cover, and steam until tender, 10 to 15 minutes.

6Place carrots to a large bowl and mash.

7Stir melted butter, eggs, sugar, vanilla extract, allspice, nutmeg, ginger, salt, and black pepper into carrots.

8Transfer carrots into prepared casserole dish.

9Bake in the preheated oven until set, about 40 minutes.
