Jelled Spinach Salad

Ingredients

  • 1 pkg. lemon jello
  • 1 c. hot water
  • 1/2 c. mayonnaise
  • 1/2 c. cold water
  • 2 tsp. lemon juice
  • 1/3 c. chopped celery
  • 3/4 c. cottage cheese
  • 1 c. fresh spinach, cut into small pieces
  • dash cayenne pepper
  • 2 tsp. minced onion
  • 1/4 tsp. salt

Directions

    Dissolve lemon jello in hot water and then add next three ingredients.

    Place in freezer until set.

    Transfer to mixing bowl and whip with beater.

    Add celery, cottage cheese, spinach, cayenne, onion and salt.

    Mix thoroughly and chill.

    Serve cold. Serves 9 to 12.
