  • 1 cup melted butter
  • 1 cup powdered sugar (plus some for dusting the finished squares)
  • 4 eggs
  • 2 cups sugar
  • 1 teaspoon baking powder
  • 2 cups flour (I use Bob's Red Mill 1 to 1 gluten free)
  • 4 tablespoons flour for lemon filling
  • 1 tablespoon zest of one lemon
  • 6 tablespoons freshly squeezed lemon juice (zest the lemon before cutting and juicing!)

    Preheat oven to 350

    Line 9x13 pan with parchment paper

    combine melted butter, 2 c flour and 1 c powdered sugar in a bowl and mix just until it comes together. Press into the prepared 9x13 pan all the way to the edges. Bake 15-20 minutes or until golden brown.

    While crust is baking, combine eggs, 2 c sugar, baking powder, 4 T flour, lemon juice and lemon zest in a large bowl. Whisk until smooth. When crust is ready and still warm, pour filling into pan and return to oven.

    Bake until filling is set and slightly brown on top, 20-30 minutes.

    Remove from oven and allow to cool before dusting with powdered sugar and cutting.
