  • 2 scoth bonnet peppers, chopped
  • 2 clove garlic, chopped
  • 2 stick scallions, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 1/2 tsp ground cloves
  • 1 1/2 tsp ground cinnamon
  • 1 1/2 tsp allspice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 lb chicken legs and thighs
  • 2 tbsp olive oil
  • 2 tbsp worcestershire sauce

    Preheat oven to 425F.

    Mix the dry rub ingredients together.

    Score chicken on skin side.

    Apply dry rub to chicken.

    In a dutch oven heat olive oil and then add chicken.

    Cook and brown chicken for about 10 minutes.

    Add worcestershire sauce and stir.

    Cover chicken and place in oven.

    Cook for about 20 minutes.

    Serve.
