  • 4 lb. pork shoulder (see note)
  • 4 tsp. Jamaican Jerk seasoning

Directions

    Wash pork well.

    Mix seasoning well into pork.

    Sprinkle with soy sauce.

    Leave covered overnight in refrigerator.

    Cover and bake for 1 hour.

    Uncover and bake 30 minutes or longer, basting occasionally.

    For a dark color, add a little browning.
