  • 3 Tbsp. salt
  • 2 Tbsp. brown sugar
  • 2 tsp. chili pepper
  • 1 tsp. black pepper
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp. dried mustard
  • 1/2 tsp. powdered cumin
  • 1 Tbsp. paprika
  • 1 tsp. garlic powder
  • 6 lb. lean meat, cut thin

Directions

    Combine all ingredients (except meat) into small grinder or food processor.

    Grind to release oils.

    Put spice into salt shaker.

    Cut away all fat and gristle from meat.

    Pound with mallet; sprinkle seasoning into meat as you go.
