  • 1 envelope unflavored gelatin
  • 1/4 c. cold water
  • 1/4 c. boiling water
  • 1/4 c. sugar
  • 1/4 tsp. salt
  • 2/3 c. syrup from pineapple chunks
  • 1 Tbsp. lemon juice
  • 1/4 c. mild vinegar
  • 1 c. diced cucumber, drained
  • 1 c. canned pineapple chunks

Directions

    Soak gelatin in cold water for 5 minutes.

    Then dissolve in boiling water, stirring in sugar and salt.

    Add pineapple juice, lemon juice and vinegar; let cool.

    Chill to consistency of unbeaten egg whites; then add the drained cucumber and pineapple.
