Ingredients
- 2 cloves garlic, unpeeled
- 1/4 c. apple cider or juice
- 1 1/2 Tbsp. olive oil
- 1 Tbsp. cider vinegar
- 2 tsp. Dijon mustard
- salt and fresh ground pepper to taste
- 2 c. grated jicama
- 1 c. grated carrots
- 1 c. grated Granny Smith apples
Directions

1Heat a dry heavy skillet, preferably cast iron over medium heat.

2Add garlic cloves and roast, turning occasionally with tongs until blackened in spots and soft (about 10 minutes).

3Peel, removing tough ends.

4In blender or food processor, combine garlic, apple cider, oil, vinegar and mustard.

5Process until smooth.

6Season with salt and pepper.

7In salad bowl, combine jicama, carrots and apples.

8Add dressing and toss to coat.
