- 1 qt. vinegar
- 1 Tbsp. whole cloves
- 1 Tbsp. allspice
- 1 Tbsp. mace
- 1 qt. sugar
- 1 stick cinnamon
Directions

1Cook carrots until skin comes off.

2Mix syrup made of vinegar and spices; pour over carrots.

3Set overnight.

4Bring to boil; remove spices and add carrots to jars.

5Fill within 1/2 inch of top jar with hot spiced syrup.

6Seal process in water bath.
