- 3 1/2 c. flour
- 7 medium potatoes, cooked with jackets
- 1 1/2 c. grated cheese
- 2 Tbsp. browned butter
- 2 beaten eggs
- pinch of pepper
Directions

1Boil potatoes, peel and put into potato ricer (set aside to cool).

2Mix the flour and grated cheese.

3Add cooled potatoes, salt, pepper, butter and eggs.

4Mix until dough no longer sticks to hands, adding more flour if needed.

5Roll out small pieces at a time on floured board, making a rope shape.

6Cut into 1-inch pieces.

7Drop into boiling water about 15 minutes.

8Drain and rinse with warm water.

9Pour sauce over gnocchi and enjoy.
