John'S Plum Pork Chops

  • 8 pork chops (about 1-inch thick)
  • 1 large onion, chopped
  • 3 c. bread crumbs
  • 8 purple plums, halved, pitted and quartered
  • 1 tsp. salt
  • 1 tsp. pumpkin spice
  • 1 can frozen limeade or 1 c. fresh lime juice
  • 2 Tbsp. soy sauce

Directions

    Cut a 1-inch piece of trimmed fat from pork chops.

    Put in a large skillet.

    Brown chops and remove stuffing.

    Add onion to drippings in skillet until soft.

    Stir in bread crumbs, plums, salt, pumpkin spice and 1/3 cup of lime juice.

    Stir lightly.

    Put in baking dish pork chops and cover with stuffing.

    Cover with aluminum foil.

    Bake at 375° for 45 to 50 minutes.
