- 4 Tbsp. butter
- 1 white onion, chopped
- 4 c. chicken broth
- 1 large potato, chopped
- 4 c. corn (fresh or canned), cooked
- 1/2 tsp. thyme
- 1 bay leaf
- 1 c. cream or half and half
- 6 Tbsp. butter
Directions

1Saute onions in 4 tablespoons butter until they are tender and translucent.

2Add the corn, potatoes, chicken broth and herbs. Simmer for 25 minutes.

3Puree the soup in a blender.

4Return to pot; simmer before serving.

5Add the cream and butter.

6Check for seasoning.
