  • 1 handful baby heirloom tomatoes
  • 2 tbsp. olive oil
  • salt
  • Pepper
  • 2 tbsp. sun-dried tomato pesto
  • 2 slice rustic bread
  • 2 oz. fresh mozzarella
  • A few small leaves of fresh basil

Directions

    Cut the tomatoes in half and toss with a bit of olive oil.

    Season with salt and pepper to taste.

    Set aside.

    Spread the pesto on each slice of bread.

    Place mozzarella in between the bread, with the pesto on the inside.

    Lightly oil and heat a skillet over medium-high heat.

    Cook the sandwich until it's golden brown and the cheese is melted.

    Remove from heat and top with the baby tomatoes and basil.
