- 1 handful baby heirloom tomatoes
- 2 tbsp. olive oil
- salt
- Pepper
- 2 tbsp. sun-dried tomato pesto
- 2 slice rustic bread
- 2 oz. fresh mozzarella
- A few small leaves of fresh basil
Directions

1Cut the tomatoes in half and toss with a bit of olive oil.

2Season with salt and pepper to taste.

3Set aside.

4Spread the pesto on each slice of bread.

5Place mozzarella in between the bread, with the pesto on the inside.

6Lightly oil and heat a skillet over medium-high heat.

7Cook the sandwich until it's golden brown and the cheese is melted.

8Remove from heat and top with the baby tomatoes and basil.
