- 2 eggs
- 1 cup milk
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoons plus 6 tablespoons butter
- 1 Granny Smith apple, peeled, cored, and cut into 1/2-inch cubes
- 1 cup raisins
Directions

1Heat the oven to 425 degrees F.

2Whisk the eggs and milk together in a medium bowl.

3Add the flour, salt, and sugar and whisk to blend.

4Melt 2 tablespoons of butter and whisk it into the batter.

5In each cup of regular sized muffin tins, divide cold butter, apple and raisins.

6Place the muffin tins in the oven for 5 minutes to melt the butter and cook the apples slightly.

7Remove the tins from the oven and pour the batter into each cup filling them half way up.

8Bake for 10 minutes, then reduce the heat to 375 degrees F and bake until puffed and golden brown, 15 to 20 minutes more.

9Serve hot.
