- 2 tbsp butter
- 1 cup bell pepper, chopped
- 2 clove garlic, minced
- 1 lb smoked sausage, 1/4 in slices
- 1 cup rice
- 2 cup chicken stock
- 3 tbsp Green Tabasco Sauce
- 14 1/2 oz Diced tomatoes with chilis, drained
- 1 pinch cajun seasoning to taste
- 1 medium onion
Directions

1Melt butter over medium high heat

2Add onion, pepper, garlic, and sausage.

3Cook until veggies are tender.

4Stir in rice, stock, green pepper sauce, tomatoes, and cajun seasoning.

5mix well and bring to a boil

6reduce heat and simmer 25 minutes

7Remove from heat and let sit for 5 minutes before serving
