  • 2 tbsp butter
  • 1 cup bell pepper, chopped
  • 2 clove garlic, minced
  • 1 lb smoked sausage, 1/4 in slices
  • 1 cup rice
  • 2 cup chicken stock
  • 3 tbsp Green Tabasco Sauce
  • 14 1/2 oz Diced tomatoes with chilis, drained
  • 1 pinch cajun seasoning to taste
  • 1 medium onion

    Melt butter over medium high heat

    Add onion, pepper, garlic, and sausage.

    Cook until veggies are tender.

    Stir in rice, stock, green pepper sauce, tomatoes, and cajun seasoning.

    mix well and bring to a boil

    reduce heat and simmer 25 minutes

    Remove from heat and let sit for 5 minutes before serving
