- 8 oz. jumbo shells
- 2 c. Ricotta cheese
- 8 oz. Mozzarella, diced
- 2 eggs, slightly beaten
- 1 tsp. chopped parsley
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/4 c. grated Parmesan cheese
- tomato or meat sauce (about 3 c.)
Directions

1Cook shells in plenty of boiling, salted water for 12 to 15 minutes; drain.

2Combine Ricotta, Mozzarella and beaten eggs; blend with salt, pepper and parsley.

3Fill shells with cheese mixture.

4Spread a thin layer of sauce in a rectangular baking dish.

5Place stuffed shells 1 deep in casserole; top with remaining sauce.

6Sprinkle with grated cheese; cover with a sheet of aluminum foil.

7Bake at 350° for about 25 to 30 minutes.
