Jumbo Stuffed Shrimp

Ingredients
- 2 Tbsp. butter
- 1 Tbsp. Dijon mustard
- 1 c. bread crumbs
- 1 egg
- 24 large prawns, butterflied
- lemon twists
- 1 Tbsp. green onion, minced
- 1 tsp. chopped sage
- 1 c. crab meat, minced
- 1/4 c. heavy cream
- sprigs of fresh dill or mint
Directions

1Preheat oven to 425° (220° C).

2In 2 tablespoons of butter, saute the onion.

3Blend in the mustard and sage.

4Remove from heat. In mixing bowl, blend together the bread crumbs, crab meat, egg, cream, sage mixture and remaining butter.

5Place 2 teaspoons of mixture on each butterflied shrimp.

6Place on lightly greased baking sheet.

7Bake 8 to 10 minutes or until golden brown.

8Serve hot.

9Garnish with sprig of fresh dill or mint and lemon twist. Serves 4.
