- 2 carrots, grated
- 12 cup pine nuts
- 12 cup seedless raisin
- 4 tablespoons margarine
- 3 onions, chopped
- 1 chopped jalapeno
- 2 12 cups cooked white rice
- 1 tablespoon cinnamon
- 1 tablespoon clove
- 1 tablespoon cardamom
- 1 tablespoon cumin
Directions

1Place carrots in saucepan add water, cover.

2Bring to a boil, reduce heat, cover and simmer for about 5 minutes.

4Melt margarine in a skillet on medium heat.

5Add onions, saute until lightly brown.

6Combine drained carrots, rice and onions.

7Stir in pine nuts, raisins, chilies, and spices.

8Simmer over low heat for about 10 minutes.
