  • 2 carrots, grated
  • 12 cup pine nuts
  • 12 cup seedless raisin
  • 4 tablespoons margarine
  • 3 onions, chopped
  • 1 chopped jalapeno
  • 2 12 cups cooked white rice
  • 1 tablespoon cinnamon
  • 1 tablespoon clove
  • 1 tablespoon cardamom
  • 1 tablespoon cumin

    Place carrots in saucepan add water, cover.

    Bring to a boil, reduce heat, cover and simmer for about 5 minutes.

    Drain.

    Melt margarine in a skillet on medium heat.

    Add onions, saute until lightly brown.

    Combine drained carrots, rice and onions.

    Stir in pine nuts, raisins, chilies, and spices.

    Simmer over low heat for about 10 minutes.
