- 1 bunch kale, ribs removed, leaves cut into pieces
- 4 tablespoons olive oil
- Kosher salt
- 1/2 cup popcorn kernels
- 2 tablespoons unsalted butter, melted
Directions

1Preheat the oven to 350 degrees F.

2Toss the kale with 1 tablespoon oil and use your hands to massage it evenly into the kale.

3Spread in 1 layer on a baking sheet and season with salt.

4Bake until crispy, about 20 minutes.

5Let cool completely.

6Transfer the kale to a food processor and process until it forms a fine powder.

7Heat the remaining 3 tablespoons olive oil in a saucepan over medium-high heat.

8Add 3 popcorn kernels and cover.

9When the kernels pop, add the remaining kernels, cover partially and heat until they start popping.

10Cook, shaking the pan frequently, until the popping slows almost to a stop.

11Pour the popcorn into a bowl, drizzle with the butter, add the kale powder and season with salt.

12Toss to evenly coat the popcorn.
