- 12 lb. turkey
- 12 ti leaves, deveined
- 2 pieces banana leaf
- 3 to 4 Tbsp. Hawaiian salt
- 3 Tbsp. liquid smoke
Directions

1Rinse, drain and dry turkey.

2Line a large roasting pan with heavy-duty aluminum foil.

3Place the ti leaves, radiating from the center.

4Place a banana leaf on the ti leaves.

5Place the turkey on top of the leaves.

6Rub the turkey with salt and liquid smoke on the inside and outside.

7Fold the leaves around the turkey. Place the other banana leaf over the ti leaves.

8Seal well with foil.

9Roast in 350° oven for 4 hours, then lower to 325° for 1 to 2 hours.

10Shred to serve.
