- 1 cup TVP (Texturized Vegetable Protein)
- 78 cups water boiling
- 1 tablespoon olive oil
- 1 large yellow onion minced
- 1 clove garlic minced
- 1 slice ginger 1 inch, minced
- 3 tablespoons tomato paste
- 1 cup tomatoes, stewed, canned
- 2 teaspoons curry powder
- 1 teaspoon salt
- 18 teaspoon cayenne pepper
- 1 cup green peas
- 1 cup mushrooms sliced
Directions

1Combine TVP and water in a bowl.

2Let stand for 10 minutes.

3Heat oil in a large cast-iron skillet or wok.

4Stir-fry onion, garlic and ginger for 5 minutes.

5Add TVP and stir-fry another 5 minutes.

6Add tomato paste, tomatoes, curry powder, salt and cayenne.

7Simmer a few minutes.

8Add peas and mushrooms.

9Bring to a boil, cover and simmer over low heat for 5 minutes.
