- 1/2 c. vegetable shortening
- 1 stick margarine
- 2 1/4 c. all-purpose flour
- 1 c. buttermilk
- 1 c. coconut
- 5 egg whites, beaten
- 2 c. sugar
- 5 egg yolks
- 1 tsp. baking soda
- 1 tsp. vanilla
- 2/3 c. chopped nuts
Directions

1Cream shortening and margarine with sugar.

2Add egg yolks, one at a time.

3Beat well. Add flour and baking soda alternately with buttermilk.

4Add vanilla, coconut and nuts; fold in beaten egg whites.

5Bake in two or three 8 x 8 x 2-inch layers at 350° for 35 to 40 minutes.
