- 2 young rabbits (2 1/2 to 3 1/2 lb.)
- 2 eggs, beaten
- 3 c. milk
- 1 1/4 c. flour
- 1 tsp. salt
- 1/8 tsp. black pepper
- 1/2 c. oil
Directions

1Wash dressed rabbits thoroughly.

2Dry; cut into pieces. Combine eggs and the milk; add 1 cup flour gradually.

3Salt and pepper and beat until smooth.

4Dip rabbit into batter and fry in oil until brown, about 15 minutes.

5Reduce heat and continue cooking until tender, 30 to 40 minutes, turning frequently. Makes 4 to 6 servings.
