Kentucky Pound Cake

  • 2 1/2 c. self-rising flour
  • 1 1/2 c. vegetable oil
  • 1 small can crushed pineapple (with juice)
  • 1 c. chopped nuts
  • 4 egg whites, stiffly beaten
  • 2 c. sugar
  • 4 egg yolks
  • 2 Tbsp. water
  • 2 tsp. cinnamon
  • 2 tsp. nutmeg

Directions

    Combine sugar, egg yolks and oil.

    Add flour, water, cinnamon, nutmeg and pineapple.

    Beat well by hand (not mixer).

    Add nuts and fold in beaten egg whites.

    Pour into ungreased tube pan.

    Bake at 325° for about 1 hour and 15 minutes.
