- 3/4 c. yellow corn meal
- 2 tsp. baking powder
- 1 Tbsp. sugar
- 1/2 c. sifted enriched flour
- 1 tsp. salt
- 1 1/2 c. milk
- 1 c. fresh corn kernels
- 3 Tbsp. melted butter
- 2 eggs, beaten
Directions

1Combine corn meal, baking powder, sugar, flour and salt in a mixing bowl. Combine eggs, milk, corn kernels and butter. Add this mixture to the dry ingredients and stir until mixed. Pour into a buttered casserole. Bake at 375° for about 40 minutes. Serve hot.
