  • 1 lb. macaroni, penne or ziti, cooked tender and cooled
  • 4 T unsalted butter
  • 3/4 cup onion, small dice
  • 4 T flour
  • 3 cups milk
  • 1 cup heavy cream
  • 1 bay leaf
  • 1/4 t ground cloves
  • Salt and freshly ground pepper
  • 1 cup Kerrygold chedder, grated
  • 1 cup Kerrygold swiss, grated
  • 1 1/2 cup Kerrygold Dubliner, grated
  • 1/4 t ground nutmeg
  • 1 cup breadcrumbs
