Ingredients

  • 1 (3 oz.) pkg. lime Jell-O
  • 1 c. boiling water
  • 1 egg yolk
  • 1 tsp. aromatic bitters
  • few drops green food coloring (optional)
  • 1 baked 9-inch pie shell
  • 1 or 2 tsp. lime rind, grated
  • 1/2 c. lime juice
  • 1 1/2 c. (15 oz.) condensed milk
  • 1 egg white

Directions

    Dissolve Jell-O in boiling water.

    Add lime rind and juice. Beat egg yolk slightly; slowly add gelatin, stirring constantly. Add milk and bitters, stirring until blended.

    Chill until slightly thickened.

    Beat egg white until stiff peaks form.

    Fold into Jell-O mixture.

    Add food coloring.

    Pour into pie shell. Chill until firm.

    Garnish with whipped cream or Cool Whip and lime slices, if desired.
