- 4 whole Egg Yolks
- 1 cup Meyer Lemon Juice
- 1 teaspoon Meyer Lemon Zest
- 2 cans Sweetened Condensed Milk (14oz Each)
- 1 whole Prepared Graham Cracker Crust
- 1 cup Whipped Cream (optional)
Directions

1Preheat oven to 350 degrees.

2Beat egg yolks with meyer lemon juice and zest.

3Add sweetened condensed milk and beat to combine completely with the egg mixture.

4Bake for 5-10 minutes, until small bubbles form.

5Top with or serve alongside whipped cream. Use my stabilized whipped cream recipe if you want to top with whipped cream before serving time.

7I suspect that regular lemons will work in this recipe too, but I have not tried them yet.

8For homemade graham cracker crust, I use 1 1/4 cup cracker crumbs, 1/3 cup butter, and 1/4 cup sugar pressed into the pan and baked for about 7 minutes at 375 degrees.
