Ingredients

  • 8 roma tomatoes, chopped
  • 5 spring onions, sliced
  • 4 clove fresh garlic, minced
  • 2 fresh jalapenos, chopped (no seeds or membranes)
  • 1 small red/Spanish onion, chopped
  • 1/2 bunch fresh cilantro, loosely chopped
  • 1/2 tbsp extra virgin olive, grapeseed, or avocado oil
  • 1/2 tsp lemon juice
  • 1/2 tsp ground cumin
  • 1 dash liquid smoke
  • 1 dash salt to taste
  • 1 dash Tapatio or similar Hot Sauce, to taste

    Place all ingredients into a bowl and mix well.

    I like mine partially blended and use an immersion blender.

    For best results, cover and refrigerate for a day before serving.
