Kielbasa Cabbage Soup

Ingredients
- 1 medium onion, chopped
- 4 to 6 cloves garlic, minced
- 4 c. water
- 1 to 2 Tbsp. brown sugar
- 4 potatoes, peeled and cubed
- 1 tsp. caraway seeds
- 1 small cabbage, coarsely chopped
- 2 Tbsp. olive or vegetable oil
- 3 Tbsp. cider vinegar
- 1 lb. fully cooked kielbasa, cut in 1/2-inch pieces
- 3 large carrots, chopped
Directions

1Saute cabbage, onion and garlic in oil for 5 minutes or until tender.

2Combine water, vinegar and brown sugar.

3Add to cabbage. Stir in remaining ingredients.

4Bring to boil.

5Reduce heat; cover and simmer for 60 to 70 minutes or until vegetables are tender. Makes 8 to 10 servings.
