- 1 large Polish kielbasa sausage
- red wine
- 1 medium onion, thinly sliced
- 6 scallions, thinly sliced (white and green)
- 1/4 c. parsley, finely chopped
- 1 tomato, peeled, seeded and cut into thin strips
- 1/4 c. mustard vinaigrette
Directions

1Poach sausage as follows:

2Put sausage in an enamel or stainless steel skillet.

3Cover with a mixture of 1/2 red wine and 1/2 water.

4Add onion slices.

5Bring to boil; cover, lower heat and cook gently for 20 to 30 minutes.

6Cool in poaching liquid.
