Ingredients

  • 1/2 c. mayonnaise
  • 1/2 c. milk
  • 2 eggs
  • 1 c. Swiss or Gruyere cheese, grated
  • 1/2 c. chopped onion
  • dash of white pepper
  • 1 Tbsp. cornstarch

Directions

    Line an unbaked pie shell with pastry.

    Bake at 425° for 8 minutes.

    Remove from oven and set aside.

    In a blender combine mayonnaise, milk, eggs and cornstarch.

    Process until smooth.

    Add cheese, onion and pepper, then blend at low speed for 2 to 3 seconds; just to combine.

    Fold in crab meat.

    Pour into pastry shell and bake at 350° for 35 to 45 minutes until top puffs up and is golden brown.

    Remove from oven to rest 10 minutes before serving so custard can firm.
