- 2 lbs jumbo shrimp or 2 lbs colossal shrimp, shelled and deveined
- 1 cup flour
- 12 teaspoon salt
- 12 teaspoon pepper
- 2 eggs, beaten for 10 seconds
- 16 fluid ounces extra virgin olive oil
- 1 lemon, cut into 8 wedges
Directions

1Mix together the flour, salt and pepper.

2Rinse the shrimp under cold water and dredge them in the flour mixture.

3Dip them in the egg and then fry them in batches in hot oil (about 8 minutes).

4Serve with lemon wedges.
