  • 1 c. diced onion
  • 1/2 lb. fresh or canned mushrooms
  • 1/4 c. butter
  • 1 can condensed cream of chicken soup
  • 1 can condensed cream of mushroom soup
  • 1 can Ro-Tel tomatoes (tomatoes canned with green chilies)
  • 2 cans chopped green chilies
  • 1 garlic clove, minced
  • 1 Tbsp. chili powder
  • 2 c. diced, cooked chicken (I use at least 5 chicken breasts)
  • 1 c. chicken broth
  • 1 pkg. (8 oz. or so) soft corn tortillas, torn up
  • 1 lb. or more grated Cheddar cheese
